The Fergus is a legend – first produced in 1993 from the old vine Grenache vineyard next to Tim’s kitchen, owned by Fergus Mahon. That year was one of a shortage of grapes and when Tim persuaded Fergus to sell him his grapes, he promised to name the wine after him. The Fergus is now one of the great blends to come from Australia.
2015 Tim Adams The Fergus 14.5% 6x75cl £72.00
The 2015 Fergus is a blend of Grenache, Tempranillo and Malbec, produced using the Ripasso technique where the Grenache grapes are crushed over the skins of previously crushed Tempranillo. A considered amount of Tempranillo and Malbec is added for layered complexity and then the wine is transferred to a mix of aged French and American oak hogsheads, where it remains for 24 months before bottling.
As you pour the wine into your glass you will be greeted by a deep red colour and shining hue. The nose has lifted berry aromas, with a touch of dried spice and hint of chocolate. On the appealing palate there are flavours of ripe berries, violets and wild spices, all wrapped up in silky tannins and infused oak.
The wine is medium-bodied, with a layered and luscious texture that fills the mouth and lingers on the finish. It is drinking beautifully now and will cellar well for a decade or more.
