Bird in Hand - Adelaide Hills - Kym Milne is a Master of Wine and a master winemaker

After graduating from the winemaking course at Roseworthy, near Adelaide, he has vast experience in making top class wines all over the world. He spent 10 years as Chief Winemaker at Villa Maria in New Zealand and then another decade making wine in Europe and South Africa, before returning home to South Australia in 2003.

While based in the UK and gaining his Master of Wine, he was a frequent visitor to The Australian Wine Centre and a great fan of our Rieslings. When we heard that he had been made chief winemaker at Bird in the Hand winery, in the beautiful Adelaide Hills, we knew this would be a winery to follow. Sure enough, in the 2019 International Wine Challenge, Bird in the Hand was awarded 5 trophies and named Red Winemaker of the Year.

The Adelaide Hills region stands high in the Mount Lofty Ranges overlooking Adelaide. Due to its altitude, some 350 metres above sea level and the prevailing winds from the nearby Spencer’s Gulf, this is an ideal climate to produce fresh Sauvignon Blanc and modern Australian Chardonnay.

It is also a great place to grow Shiraz. Adelaide Hills Shiraz defies the big, bold caricature of Australian Shiraz. Its style is refreshing and elegant– wines with attractive pepper and spice aromas and fine tannins which deliver palate length and will age well.

Syrah or Shiraz? Same grape variety, the answer is in the wine style.

 Kym explains “Syrah - there are quite distinctive parcels of cool-climate Shiraz we source from our own vineyard and a couple of neighbouring vineyards in the cool Woodside area. Stylistically the aim is to produce a wine that reflects these cooler sites – lighter in body but with lots of aromatic spice, elegance and still with the structure and complexity to age well.“

“Shiraz - for the Shiraz style we have always used a combination of warmer and cool sites – the warmer sites, in the Mount Lofty sub-region, give our wine its core of ripe blackberry fruit character and fuller body. Our style for the Bird in Hand Shiraz has always focused on being at the ripe end of the cool climate Shiraz spectrum.”

2019 Bird in Hand Adelaide Hills Sauvignon Blanc 12.5% 6x75cl £90.00

This is a wine made by a winemaker who really understands Sauvignon Blanc. It has lifted, fresh and punchy flavours and aromas, sensational citrus, honey and tropical flavours, minerality, elegance and mid-palate weight. It is bright and aromatic, with a fresh and vibrant finish, crisp acidity and good length. It is a brilliant aperitif, while it is a great match for grilled fish, chicken dishes or salads.

2018 Bird in Hand Adelaide Hills Chardonnay 13.0% 6x75cl £114.00

A great example of the new style of Aussie Chardonnay with the oak restrained to let the fruit shine through. Light to mid yellow; intense white peach, apricot and nougat aromas with hints of grilled hazelnuts and faint underlying smoky char. Medium to full bodied, rich and intense flavours with a refined structure.

Lifted and perfumed on the nose, this shows notes of blackberry and plum laced with classic nuances of black pepper, spice, vanilla and cedar. Medium to full bodied and elegant with fleshy dark fruit characters, silky tannins and balanced acidity culminating in a long and rewarding finish.
